Marcella Hazan’s ICONIC Tomato Sauce: The only sauce you need

We all have jarred sauce in the pantry but this is by far the easiest and only sauce you need in your life. Marcella Hazan, the cookbook goddess shared this insanely simple and rich, velvety recipe and the world went appropriately bananas. Once you make this recipe, you will likely never crack a jar again. The difference is profound.

Ingredients

  • 2 cups tomatoes, in addition to their juices or a 28-ounce can of San Marzano whole peeled tomatoes
  • 5 tablespoons butter
  • 1 onion, peeled and cut in half
  • Salt

Instructions

  1. Combine the tomatoes, their juices, the butter and the onion halves in a saucepan. Add a pinch or two of salt.
  2. Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes. Stir occasionally, mashing any large pieces of tomato with a spoon. Add salt as needed.
  3. Discard the onion before tossing the sauce with pasta. This recipe makes enough sauce for a pound of pasta.

Thanks, Deb, for reminding me about the Hazan recipe. It prompted me to use her recipe for sauce to use on the pizzas I made this evening. Delicious and so easy.
