This is my mother’s recipe and I absolutely love it. With just 3 ingredients, prep takes no more than 15 minutes and they fly off the plates at every playdate. I make this when I don’t want to cook. Flash fry them like my mother does for a golden, crunchy coating or just bake them off start to finish. Serve with a simple salad and you are done. These make a great lunch the next day.
Pre-heat oven to 400 degrees. Pulse chicken and entire bunch of parsley (not stems) in food processor until burger consistency, there should still be small chunks, do not over process. Season with salt and pepper. Form into balls, roll in panko to coat and flatten into patties. In a small pan, heat oil and butter (1:1) over medium high heat, enough to flash fry, until almost smoking. Cook in batches, until each side is browned - about two minutes per side. Place on an oil lined baking sheet and bake for about 15 minutes, or until done. Instead of flash frying, spray patties with enough oil to coat on one side, so that the patties will turn golden during baking. Toss in the oven and bake off. Ingredients
